We ruined the surprise, but we couldn’t wait to spill the beans. A shimmering, turquoise beacon, complete with a Mediterranean stone wall, lush green surroundings and plenty of plush bean bags, a poolside dinner is unbeatable. If you fancy eating inside, enter the warm glow of giant paper lanterns and get cosy.

Now for those Italian yums we mentioned. Start as you mean to go on with some sumptuous antipasti. From homemade meatballs to grilled octopus and burrata with parma ham, it’s a foodie heaven inside and out. Infused with fresh herbs and locally grown produce, authentic flavours are the order of the day.

Moving on and the pasta bar strides into the spotlight. Ravioli is stuffed with anything from squid and barramundi to spinach and ricotta whilst tagliatelle is crowned with lamb ragu and tagliolini is laced with truffle oil, cream and crispy prosciutto. And that’s before we get to the star of the show; spaghetti lobster. Whether you prefer pasta, pizza or pesto, it’s perfection!
